Meal Plan Week #8
MONDAY: Salad Bar
All the fixin's for your salad and a selection of fruit as well.
TUESDAY: Skillet Enchiladas
I might be pushing with this recipe. Instead of rice, it has quinoa and there are no tortillas. This is an area our family hasn't adventured to yet. By the way, I was surprised how expensive quinoa is to buy!
WEDNESDAY: Waffles & Eggs
THURSDAY: Slow Cooker Turkey Chili & Grilled Cheese
We love chili and grilled cheese, so I'm trying to make our chili a little healthier.
FRIDAY: Clean Out the Fridge!
We have my dad and step-mom coming on Saturday to stay for a week plus we are doing J's 5th birthday party on Saturday so we'll need some extra storage space. Side note: how the heck is my youngest baby 5?!

Super easy 4 ingredient cookies
I love to bake. I don't understand the people that say it is hard. I've only ever encountered a few mishaps in my baking. Yet I've had dozens of recipe fails when cooking.
I'm one of those people who sees something on sale and say I better buy that. I'll need it some day. Well this left me with many boxes of Devil's Food Cake. As much as I love baking, cakes are not my thing. Cupcakes, yes. Full-blown cakes with frosting, no. So I decided to turn cake mix into cookies. Best of all, you only need 4 ingredients!
I'm one of those people who sees something on sale and say I better buy that. I'll need it some day. Well this left me with many boxes of Devil's Food Cake. As much as I love baking, cakes are not my thing. Cupcakes, yes. Full-blown cakes with frosting, no. So I decided to turn cake mix into cookies. Best of all, you only need 4 ingredients!
Chocolate Chocolate Chip Cookies
makes 2 dozen
Ingredients:
- Box of Devil's Food Cake mix
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 package of semi-sweet chocolate chips (about 6 oz)
Mix first 3 ingredients together. Once combined add chocolate chips. The mixture will be very gooey. Drop onto baking sheets. Put in 375* oven for about 10 minutes. Serve with ice cold milk.

This week we've got a couple of easy meals, a couple of new recipes and a good mix to hopefully please everyone :)
MONDAY: French Toast & Fruit
TUESDAY: Nachos!
WEDNESDAY: Crock Pot Lasagna Soup
Lasagna is a family favorite, we all like soup. So why not try this one out!
THURSDAY: Tater Tot Casserole
FRIDAY: Make-Your-Own Wraps with Apple & Poppy Seed Coleslaw
I've had this coleslaw on my list for quite awhile, I'm exited to try it out!

Meal Plan Week #6
Meal planning is continuing to save my evening life so I shall continue to meal plan! I've also started tracking what I eat again with My Fitness Pal so I'm hoping a nice bikini body is in my future :) I'm looking for morning smoothie suggestions as well, I need something that will fill me up but not be a done of calories.
MONDAY: Turkey Mini Meatloaf with Asparagus
A few years back there was this show on Lifetime called Cook Yourself Thin. I acquired their cookbook from the show and decided that since meatloaf is a family favorite, maybe I could make this our "new, healthy" recipe for the week.
TUESDAY: Bean Burritos
WEDNESDAY: Chicken Patty Sandwiches and Tater Tots
I'm trying to eat a bit healthier so I'll be having a salmon patty sandwich while everyone else has chicken patties.
THURSDAY: Spaghetti with Garlic Bread and Side Salad
This is the most requested meal at our house.
FRIDAY: Baked Potato Bar
I've got all the fixin's you could imagine to dress up your baked potato. I'll probably be dressin' up a sweet potato while everyone else has the standard white tater.

Meal Plan Week #5
The girls and I made it back from sunny Florida to the frozen tundra late on Sunday. This made my normal grocery shopping plans go out the window so we are getting a late start to the meal plan for the week. But nonetheless here it is!
MONDAY: Take out
I hate to do this, but we have no groceries. The rest of the week will be better, I swear!
TUESDAY: Pulled Pork Tacos
Pulled pork in the crock pot makes this one super easy! Dump a jar of salsa over the pork, cook all day, shred it and eat!
WEDNESDAY: Pad Thai
I found a picky eater (read: kid friendly) pad thai recipe, so we are going to step out of our comfort zone a bit and try this out. This isn't the exact recipe I'm using, but same author so it's close enough :) We will also be claiming this as our "try 1 healthy, new recipe" for the week. UPDATE: This was terrible. Like not even edible, terrible. I threw the whole thing in the trash and then ate this instead.
THURSDAY: Pasta Bake
I have a meeting that is sure to run late tonight so I'll prep everything the night before so the husband can pop this into the oven.
FRIDAY: BBQ Pork Sandwiches
I bought a huge pork loin a couple weeks ago so we will use half on Tuesday for the tacos and the other half for BBQ sandwiches tonight.
What's your favorite recipe to make? I'd love to do a new slow cooker soup/stew next week.
